Breakfast has been, and will forever be, my favorite meal of the day. So, I’m going to share my favorite healthy breakfast (at the moment) with you guys!
I’m that type of person that even if my first meal of the day is at 1:00 pm, it’s going to be like breakfast. I’ve had days where every meal was breakfast and let me just tell you, it was a good.. freakin.. day! Now, you’re probably thinking cinnamon rolls and bacon. No, that’s not what I’m talking about, even though that would be nice… We’re talking eggs, spinach, avocado, smoothies, etc: all the tasty healthy stuff we love.
Anyway, this recipe has been a favorite for me and my family. We have it at least once a week. It’s easy, healthy, low in carbs and it tastes awesome! We call them omelette eggs. You know how you mess up an omelette when you flip it and decide to just mix it all up? That’s basically what this is.. and Tux (my Border Collie) approves of this recipe 100%…
- Organic cage free eggs (depending on how many you’re cooking for, we usually cook two eggs per person).
- Organic baby spinach (add as much as you desire. I like to make mine count as a salad basically, so I put about two good handfuls in mine)
- Organic deli turkey meat (around 2 oz. per person is good)
- One half organic avocado (per person)
Just add some (real) butter to a nonstick pan, scrabble it all up and top with sliced avocado and pink himalayan salt! By the way, you can alter this recipe however you like, this is just how I prefer mine! 🙂
