My Favorite Healthy Breakfast

Having this meal for breakfast (or lunch) really does make you feel great throughout the day!  You get a good dose of protein, carbs, and vitamins.  On top of all of that, it just tastes great!

When I’m not exactly in the mood for a “sweet” breakfast and I’m wanting something to fill me up and please my “bacon tooth”, (aka salty tooth or whatever you’d like to call it), this is one of my favorites!

All I do, is:

  • I grease a pan with coconut oil and cook my eggs (over easy/fried)
  • make two pieces of gluten free toast  (I use Rudis)
  • Put avocado, mayo, and tomato on your toast
  • add salt and pepper

I also like putting the eggs on top of the toast, it all tastes great together!  I enjoy this breakfast while I watch “Friends” on Netflix, it just makes me happy for the rest of the day.
